No Crust Pizza

I love pizza night! Even GF pizza night. I’ve found several GF pizza crusts that are pretty good, even remarkably similar to non-GF crust. But occasionally I like to go back to the first GF pizza I made with a “no crust” crust.

Warning: this crust looks really weird but comes out really delicious.

Crust Ingredients:

  • 2 eggs
  • 2/3 C Parmesan cheese
  • 1 1/2 tsp garlic powder/salt
  • 8 oz full fat cream cheese (I’ve tried reduced fat…it really doesn’t come out the same)

Preheat oven to 350 degrees. Using a hand mixer, combine all crust ingredients and pour into greased 9×13 dish.

Bake for 15 minutes, then let sit for 10 minutes before topping.

After 10 minutes, spread sauce and top with toppings of choice. Tonight I just used mozzarella and Italian sausage. Sprinkle with a touch more garlic powder/salt and bake for another 10 minutes.

And done! Pretty easy, low in carbs…and low in gluten! Serve with a little salad, a little vino, and you have yourself a little dinner cooked and ready to serve in about 40 minutes!
