It’s not fancy, it’s not gourmet, but it’s easy and sometimes that’s all you need on a Tuesday night.
I have to give credit to my mother-in-law for this wonderful recipe. It takes less than 5 minutes to prepare, and you have plenty of time to create sides (or take a nap) while it’s cooking in the oven!
You may want to get a pencil and pen to write down all of the ingredients…
1 pork tenderloin, about 1 lb, and seasoning of your choice. I’m not sure if the Regas seasoning is sold anywhere other than Knoxville (named after a local restaurant), but if it is you should get it. Now. Because it’s delicious!
Preheat oven to 375 degrees. Grease a 9×13 casserole dish or oval/oblong dish. Trim any fat from pork. Liberally sprinkle seasoning all over pork and gently rub in so that it’s even all over.
Place in oven, set your timer for 45 minutes, and make your sides, or wash the dishes, or do a load of laundry. See? Easy peasy.
Let pork rest for about 10 minutes before serving to keep all of the juices in. Goes great with almost any side, and is even great for lunch the next day! Enjoy!

- 1 1lb pork tenderloin
- Seasoning of your choice
- Preheat oven to 375 degrees
- Grease casserole dish
- Trim fat from pork
- Liberally season pork and gently rub in
- Cook for 45 minutes or until no longer pink in center
- Let rest for 10 minutes before serving
