I am not one to create my own recipes. I only wish I was that creative!
So until that spark of creativity strikes, I’ll blog about other people’s fabulous recipes.
Rushing to get out the door on time every morning, I love having something I can just grab out of the fridge and eat in the car or quickly eat at my desk. Feeling full and satisfied until lunch time is a bonus!
Lately I’ve gotten on a protein muffin/bar kick. They’re super easy to make, delicious on the go, and ridiculously healthy! I try to make at least one recipe every Sunday afternoon, and then I’m set for the week. This week’s choice: pumpkin protein muffins from Dashing Dish.

Yet another bonus: All ingredients are GF! If you’re extra-sensitive like me, just make sure the oats are also GF. I like Bob’s Red Mill GF Rolled Oats the best.
Just place all ingredients in the blender and blend until combined and smooth. I added chocolate chips for some extra sweetness (and because I’m a chocolate addict)!
